Baked chicken, corn, and black bean taquitos



Happy Cinco De Mayo everyone! Mexican food is a must in my house so i am always looking for new things to cook. My husband would eat it every day of the week even if it was just tacos! My Daughter....refried beans and rice are a sure fire way to make sure she eats, she must get it from daddy.

Anyways we are always trying to eat just a little healthier so I decided to make bake chicken taquitos. Now I am gonna be honest I sucked at rolling these. They were those tight skinny ones you buy from the store and if you can do better yay for you!! Me I was just happy they tasted soooo good and that I could feel good about eating them. 


What you need
3 Chicken breasts cooked and shredded
3/4 cup black beans
3/4 cup corn
1 Cup mild green enchilada sauce
Corn tortillas (amount will depend on how full you make them)

What you do
In a bowl mix together all your ingredients. I let mine sit for a bout 10 minutes to the sauce is soaked up by the chicken.  Warm your tortillas wrapped in damp paper towel in the microwave for 45-60 seconds. Spray your baking dish with non stick
spray, fill your tortillas with a small amount of the mixture right down the center and try and wrap tightly. For half of mine I kept them closed with a tooth pick and it worked well. Bake for 20-25 minutes until they are crispy and starting to get golden in color. Top with your choice of topping and have a party in your mouth!!
